As the title says I'm wondering what is the reason I can taste the heated wood while smoking.
It's a Rattray's Goblin, bought new and now smoked over hundred times. I can often detect a slightly unpleasant taste of the briar which should have gone away during break in process.
What comes to mind is that's the price for a somewhat cheaper pipes. Never happens with my Savinelli's, Petersons or other pipes that have a good reputation.
What's your experience with the taste of the briar interfering your smokes and wasting good tobacco?

It's very thin since I wipe the chamber with a paper towel after every smoke. Maybe I should just leave it after smokes and wipe it only before packing it again.

The only time I have ever noticed that was in a new light-coloured morta.
It was an unmistakable smell of charred/burning wood
Close examination of the chamber revealed a couple of spots of incipient burnout.
A layer of pipe mud fixed that.
No problems since.

Update after a few smokes: the bowl is fine but the draught hole seems to slowly burn. Probably can't do much about it, maybe it will stop at some point.

When I am done smoking a pipe I take 2 soft pipe cleaners and double them over, then I wipe the bowl out getting rid of any loose ash and any loose tobacco. My cake builds up fine as I only use Virginia flakes to break in my pipes.
