One is carved out by hand (rusticated, so there are many styles of it). The other is literally blasted with sand and pulpier wood is removed at a higher rate than harder material, so you sort of see the structural parts of the root form.

Technically rustication is any purposeful marring of the surface. Sandblasting is a particular rustication technique that involves blasting the briar with media. It reveals the ring Grain of the briar and is evident by the rings going perpendicular to the grain. Other forms of rustication are nail rustication, spot carving, wire brush rustication, etc. There are all kinds of fun finishes involving rustication of one sort or another.
