I have just refinished few of cobs and I have used dewaxed shellac.
However I was wondering if regular shellac would be better.

I’m not planning on adding additional layers for coloring.

Both would be fine. Dewaxed just makes painting over it easier if you were to use it on wood. I've just used regular shellac on pipes.
