Wow that's a stunning piece. Love me a good Castello. If it smokes half as good as it looks you're in for a treat. I love the reddish hue of their briar. I've heard it said that their briar gives off a sweet taste. Always wondered if it was true or just mind games.

They do smoke well, and the briar does smoke sweeter a bit in the break in period As far as I’ve noticed anyway. I think it has something to do with the curing process, but it fades out as you build a good cake and get it broke in properly.
