I don’t want to speak for Ken Barnes, but I believe I heard an interview with him where he pronounced it Chair-a-tan. I think the main think is to get the hard ‘ch’ sound, as opposed to Share-a-tan

Like char, char-broiled. There’s a podcast from a few years ago where Ken Barnes discusses Charatan, and that’s the pronunciation he uses. While the interviewer keeps saying Sheraton... ?

Popular lore has it that Reuben would have cold cocked somebody for calling him Mr. Sheraton.

The Brits pronounce it chair-a-tan (which would be the correct way since it is a British name) and the Americans pronounce it sher-a-tan.

It more like char-it-tan. British pronunciation differs slightly because they have dialects which are completely different than American dialects. And it’s not a British name. Frederick Charatan was a Russian Jewish immigrant.
