Most think me a weirdo for liking Maxwell House... well... maybe for more reasons than just that, ha ha.
But, when my step son worked for a coffee house, he was dropping off all of these fancy Sumatran, Ecuadorian, and Ethiopian coffees. I gave them a chance. I did find that I preferred light roasts, but when he went on to college and I was back to buying my own coffees, I turned back to my old faithful, Good to the Last Drop.

I am way more particular about my tobaccos though.

I drink 8 O Clock brand coffee because it reminds me of when I was a kid and we went to town for the weekly grocery shopping. We would go to the A & P Store and the grinder was there to grind your own coffee. 8 O Clock was the brand and oh the smell that came from the grinder. Heavenly!! The smell of freshly ground coffee takes me back to those days. I like to smoke my pipe with a cup of coffee because it helps to give it that smokey, goodness taste I like.

Grew up with drip coffee so strong a spoon would stand straight up in a small coffee cup. Went in the service watery crap! Got out and Communty Coffee or Mellow Joy was the blend in Acadiana. Black no sugar was the way I drank it still do Wife has turned me on to Starbucks, Pikes Place, 3 big cups in the morning, good cigar, all is right in the world.

I generally home roast my beans to a medium roast, because that seems to suit the Colombian coffee that I prefer, and gives a wide range of notes in the one cup. but I also buy Illy dark roast, partly for convenience and partly because I occasionally enjoy that somewhat burnt flavour, though I do think a dark roast does not have much complexity of flavour: rather one note.
I prefer the medium roast with a pipe.

Love me some coffee and coffee with a bowl. Take my coffee black from charred Starbucks beans to snooty third wave washed or natural Ethiopians and use, on a weekly basis, a traditional drip, chemex, aeropress, pour over, and clever dripper. So yeah... Love the coffee ritual here.

As for smoke pairings, @Morrison Jeremiah mentioned red wine and tobacco and I got to try it for the first time. Winning pairing for sure! We have a couple bottles of red a week. Usually a cab sauv dominant blend and a syrah.

Me I'am weird with coffee. I can tell the differences with better coffees but I really only care about palatability and caffeine. I like light roasts because they have more caffeine. If I was the same with pipes as I am with coffee I'd smoke whatever but buy inoffensive blends at a mid price point.
