This is one of my favorites! I use anchos and guajillos for flavor, and arbols for heat.

I like how you get the rice to stay together.

I just finished fermenting and drying my ancho peppers from this year, very sweet aromas. I make a black stag chili with venison every year, where anchos are the main ingredient. My favorite pepper.
