Too many to list in NH. Seems like in every neighborhood you see either the buckets hanging from the trees or the more recent "surgical hoses" stringing from tree-to-tree. But to list a few that I have consumed myself (along with the requisite pancake breakfast):
Parker's Maple Barn

Fuller's Sugar House

Fadden's Sugar House

Fieldstone Farms Sugar House
Of these I would say Parker's is my favorite. I usually get my syrup from my neighbor down the street, who taps his own.

I have no idea the science behind maple syruping, but I do know the best maple syrup comes from places that endure horribly cold winters, sooo ... I think I'd rather order it from afar myself.
We raise chicken here at our house, so we trade fresh eggs for syrup when it is in season.
I think those sugar houses I provided links to above sell online. I have had gift baskets from Parker's sent to my brother in Jacksonville FL, and they are highly respected here in NH.
