Remember back when store-bought bread would mold after a few days if you left it sit out? Well, nowadays, that doesn't happen, thanks to calcium proprionate. Calcium proprionate is an anti-fungal that's now used on probably every commercial baked good bought in the US. It's also the primary anti-fungal used on processed tobacco.

I never understood the term preservatives, until the wife made homemade bread, and it molded after a few days. Now it makes sense.
