I re-jarred some McCllelland 2015 today also from 2 pint to single quart jars;5 years,3 months of ageing in the jar. Each pint had developed an amazing amount of pressure. Each required a good effort of the thumb to get the Ball Jar open and the built up forces within the jar produced a pop was almost like popping the cork on a bottle of Champaign! The aroma was what I noticed most, however. Almost as sweet and almost as much "prune" as a new poured glass of prune juice. No ketchup at all that I could tell The tobacco was on the wet side and I again originally packed each jar firmly. As to the taste profile, its too wet today to try. I am curious as to what 5 years in the jar did to this blend!
