Chicken adobo

    Its cold and windy so it is a perfect night for chicken adobo. The wife(expecting) had a craving for it so, look out Daddy is in the kitchen!

    Chicken thigh (family pack)or one whole chicken cut up. I picked up a whole chicken for $5 today!
    1 cup of each, low salt soy sauce, white vinegar, water to cover
    3 to 6 cloves of garlic. Can add whole with skin on.
    1 onion chopped
    One or two potato cut in large chunks.
    Bay leaf and dry chili if you like spicy or add chili flakes when you serve it.

    Start chicken browning in large pot skin side down. Turn once and add all other ingredients. Turn down heat to simmer and cook till chicken is tender. Serve with white rice. I'm trying potato in this for the first time tonight. My neighbor just recommended this and he is from the Philippines. National dish of the Philippines and all. You can leave them out and the dish is still good.

    Make extra rice for left overs. Flavor gets better the next day. I like to make adobo chicken fried rice the next day.
