How do yall eat the smoked fish? Like i grill fish have potatos and some bread is that how to do with smoked?

Oh, yeah. Gotta get me some soon. Wifey hates it, so I gotta hit the supermarket.
As to eating, herring in sour cream on crackers or toast, or straight from the jar.
Smoked salmon, same, but esp on bagels with cream cheese.
Smoked trout, straight, or as above.

Cold smoked on crackers usually, sometimes just off my fingers. A fillet, from a warm smoker, usually off a plate with a cob of corn, also smoked. "Squaw candy" I eat off the rack or out of a bag from my pocket as I hike. It's like a jerky.

Herring does well in the tins it comes in. No need to move to mason jars for long term storage.

If you get tired of it you can always put it in a salad. Just like tobacco ( Only to be served to annoying mother-in-laws or rich uncles you know included you in their will)
