Cubed avocado, chopped fresh tomato and onion chopped fine as snow. Cook some orzo, squeeze lemon juice on the avocado then put it, the tomato and onion, all raw, on the orzo. Add Parmesano Reggiano and mix thoroughly. If too bland add a very small amount of Grey Poupon mustard. The parmesan has salt, so try it without adding more.

Sounds pretty good.

30 years ago I was in Iowa and took a fellow to a small taco stand right off the capitol grounds. Turns out it was run by a couple from Brownsville, TX. When we got the order, with sides of guacamole, he said “I think I’d need to eat that in the dark!”

I'll print this out for my wife who retired as a food writer and columnist (Newsday Manhattan and Long Island). She'd have to do it her way, but the ingredients are right in her wheelhouse. We joke about how having teeth at our age is fiscally irresponsible. She feeds me like a maharaja.
