Are these airtight? If so, are they more prone to losing their seal when cellared? What should be done when cellaring to keep the seals intact?

I wouldn't question the seal quality. This packaging has been used extensively with food grade products for many years. The only real proof is the test of time, but then again whenever I've cracked an aged tin of Mac Baren I find the tobacco slightly drier and some oxidization on the bottom of the tin and this indicates an imperfect seal.
I'd trust it until proven otherwise.
