Since this is my first bag of Penzance and Stonehaven it won't be spending anytime in the cellar. If I happen to score anymore in the near future when some of the other dealers get it, is it best to leave it in the 8oz bag or should I jar it?

I'd suggest jarring it after you open it. I'd split it into two separate jars, that way you are only exposing part of it when you open the jar, and the other half can remain fresh.
