I do quick and easy hard cider. Sam's Club apple juice in gallon jugs with 1 1/2 cup sugar added and 1/4 to 1/2 teaspoon Safole ale yeast pitched.
1/2/3 method with 1 week primary fermentation, 2 weeks secondary, and at least 3 weeks in the bottle ((2 liter soft drink bottles) I primary ferment in a tub of water with a wet t-shirt draped over the fermenter, ambient is about 70 degrees.
Bad batches get made into apple jack.

Never used much fruit in my Brews. I brewed a stout with Cherry extract for Christmas a few years ago. Used cocoa nibs and coffee. Called it a Chocolate Covered Cherry Stout. It actually turned out really well. I have Five Gallons laagering right now (Oktoberfest) that I will put on tap this weekend, and A pumpkin ale that is almost ready.
